Too many questions?

In addition to the usual email address and date of birth, sex and location are the only pieces of information that I ask for, this is simply to gain some idea about the demographics of my users.

Your account is equipped with privacy facilities to control who sees this information, and it's set to private by default. So pretty please, don't feel the need to use false details.
